Minimalist all the way baby, everything keybinded except bandage/pot/stone as you can see.
This is what it looks like with no target, all unit frames fade out.

Shame on you for using 1-12, start keybinding letter buttons, they're much faster & efficient. Why is Omen so huge? As long as you aren't near the tank (who is the very top) why do you need to see where the entire raid is at? I keep mine large enough to see the top 5, that's plenty.

I must be retarded or something b/c I can't for the life of me figure out how people can keybind most of their abilities and remember which key does what. I know it's faster but I know I would end up pressing the wrong key all the time. I admit that I'm a clicker :-P

it's not memory, it's reflex. Use it enough times and that's what you go to press when you want it. This works especially well if the buttons always have specific roles. Setting up a new character is as simple takes much less time this way. Makes changing setups hell though.
For Example, My Priest:
1 - Opening Ability/Debuff (VampTouch)
2 - Opening Ability/Debuff #2 (SW:P)
3 - Sustained Dmg (Filler) Spell (Mind Flay)
4 - Nuke (Mind Blast)
5 - CoolDown (PW:S)
6 - CrowdControl (FearBomb)
Q - Ohh SHIT #1 (Dispersion)
E - Ohh SHIT #2 (WotF, Fade)
F1 to F4 - AOE and Utility Stuff (VampE, DevouringPlague, SW:D, InnerFocus)
Numpad - Buffs 'n Shit (Fort,ShadowProt,InnerFire,MC,FearWard)
My DK
1 - Opening Ability/Debuff (IcyTouch)
2 - Opening Ability/Debuff #2 (PlagueStrike)
3 - Sustained Dmg (Filler) Spell (BloodStrike)
4 - Nuke (ScourgeStrike)
5 - CD (DeathCoil)
6 - CrowdControl (Strangulate)
Q - Ohh SHIT #1 (Icebound Fort)
E - Ohh SHIT #2 (MindFreeze)
F1 to F4 - AOE and Utility Stuff (DeathGrip,DeathStrike,DnD,ChainsOfIce,RuneStrike)
Numpad - Buffs 'n Shit (EmpoweredRW,DeathGate,RaiseDead,RaiseAlly)
I also have a G15 so I have some side buttons for utility spells like racials and PvP stuff. Highly recommend the G keyboards.
These are some screens I took right before I changed my name. I know my unit frames are bigger than most, but because I heal from time to time, I have to see what I'm doing.

I bought a G15 controller last year but just couldn't get into it for the same reasons that I listed earlier. WTB an xbox controller to operate my toons :D

pretty much you just bind em up and get used to em. Only takes a few days if you keep on top of yourself to use the keybinds instead of clickin. I used to have bongos and xperl and all that shit and used to readjust all my bars and stuff with each new update, got tired of that tho... mostly stock.

Food for thought... I wouldn't throw up SWP until the end of your opening rotation - Doing so will increase your dps. Since you only cast SWP once per mob (with MF refreshing it), you want to be sure that it's going to tick for the most amount that it can... IE you want to be sure to cast it AFTER a warlock has put up CoE and AFTER you have built up 3 stacks of shadow weaving (there may be other buffs/debuffs that I am forgetting, but those two are the most important I can think of off hand). If you don't wait until after that, then your SWP will only tick for the amount it would without those buffs... for the whole fight (unless you renewed it, which doing so would hurt your efficiency/dps).
Just something to consider. =D

I agree with you. Those are my button assignments, not my rotation order. Normally my rotation is (VE) VT -> DP -> MB -> SW:D -> MF -> SW:P. However, incase you happen to miss any of the debuffs being up, you can re-cast SW:P and it will overwrite the previous one giving you a SW:P with all the available debuffs, which is especially helpful for Thaddius/Malygos.

By "opening ability" I assumed you meant you used that ability first.
And refreshing SWP is an unnecessary waste of mana. <3

Well to be fair, it actually used to be an opener, I just never moved it on my bar because it's been #2 for 3 years and changing it would take getting used to.
And the mana thing may be a problem after 3.1, but right now I can't run out of mana even if I go full out 100% of the time. I'm still not sure why they made dispersion a mana-regen... It is nice for raiding, but I personally wish it were better for pvp
